Pasta Primavera Recipe

Here’s something simply delicious—and deliciously simple—for your spring table. A pasta that makes the most of the season’s best: peas, snap peas, asparagus, and tender pea shoots.

Use a good egg pasta (just the right amount of chew), a generous amount of Parmigiano-Reggiano, and not much else. It comes together in no time, looks beautiful, and tastes even better. The only thing we would add is a little tiramisu to follow…

Recipe:

Pasta Primavera

Ingredients:

¼ pound Sugar snap peas, stems trimmed and cut into pieces
½ pound Asparagus, just the delicious tips please
2 tablespoons Extra virgin olive oil
1 cup English peas (or frozen will do)
1 tablespoon unsalted butter
Sea salt as called for
Black pepper as needed
12 ounces Tagliatelle
1 cup Parmigiano-Reggiano
A nice handful Pea shoots to finish

To make:

Bring a large pan to boil, add a good amount of salt. While the above is coming to a boil, fill with a large bowl with ice. Throw the veggies into the boiling water for about 2 minutes until they are bright green and keep their crunch. Quickly drain and toss into the ice bowl, mixing them up with the ice to stop further cooking and so they keep their green and crunch. Pour out the ice, douse with olive oil and set aside. Bring a large pot of water to boil for the pasta. Add a healthy amount of salt to the boiling water and add the pasta. Boil for the recommended time on the package. Make sure not to overcook!
Before draining the pasta, scoop out a mug of pasta water, and put to the side. Drain the pasta, return to the empty pot, add a tablespoon of butter and a dash of the pasta water you have saved, followed by ½ the cheese. Stir. Add ½ the veggies, more cheese and more pasta water to loosen the pasta. Keep on adding vegetables, cheese and pasta water (as needed) until the consistency is loose but not watery and everything is combined. Pour onto a serving platter, sprinkle with more cheese, the peashoots and a crack of pepper over everything.

Everyone is seated! Serve immediately!
