Alice & Francesca’s Pancake Recipe

What makes something feel made with love is often very ordinary. Alice’s pancake recipe (by way of Francesca's recommendation) is exactly that. A bowl, a spoon, familiar ingredients, and a pan warming while you spin around the kitchen. You mix the batter, watch the heat, and let the first pancake show you where you are. Laurie Colwin, the American food writer, once said that cooking is never just about the food. Alice’s pancakes make sense of that. Best eaten hot, preferably with someone hovering nearby, asking when the next one’s ready.


Recipe:

Alice & Francesca's Pancake Recipe

Ingredients:

1 cup (125g) all-purpose flour
1 tablespoon brown sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon fine salt
2 large eggs
¾ cup (180g) thick Greek yogurt (full-fat preferred)
¼ cup (60ml) milk
1 teaspoon vanilla extract
1–2 tablespoons butter, for the pan
Maple syrup, to serve

To make:

Put the dry ingredients into a bowl and give them a quick stir. In another bowl, mix the eggs with the yogurt, milk and vanilla. Tip one into the other and fold together lightly—it should look relaxed, not overworked. Warm a pan with a little butter, spoon in the batter, and wait for bubbles to appear before turning.
